Never Never Distilling Co launches Oyster Shell Gin at Society

Holy Schucks! McLaren Vale’s very own Never Never Distilling Co. teamed up with the recently launched Society to create a on-of-a-kind Oyster Shell Gin. Inspired by the Australian coastline, Oyster Shell Gin uses Kangaroo Island oyster shells to impart a minerality and subtle saline character to the gin. My plus one and I arrived at Society on a very warm summer day to try the gin for ourselves alongside perfect paired snacks by Society’s excellent chefs. Besides pairing the gin with oysters, we got to try it in two special cocktails (the Jalapeño Gibson is amazing), and even shot some gin from a freshly eaten oyster shell. Never Never’s Shay Chamberlain was on hand to walk us through a tasting, and beverage director for Lucas Group, John Ross-Jones was on hand to show off Society’s impressive cocktails.

The Society team were sadly forced to close their doors after just five days due to Melbourne’s extended lockdowns, so we’re very happy to see that they made it through such a difficult time. Teaming up with NeverNever, they set out to create a unique expression of the Australian coastline built for contemporary seafood pairings. As with all Never Never gins, this one uses triple juniper as their foundation for a long mouth-feel and bold flavour, which we adore. What’s a good drink without good food pairings? Society is a multi faceted dining destination in the heart of Melbourne’s fashionable Paris End of Collins Street. It’s the realisation of renowned restaurateur Chris Lucas (Chin Chin, Yakimono) so you know the attention to detail is strong.

It’s a flavour supported by the inclusion of other coastal botanicals including saltbush, Tasmanian wakame and native coastal daisy which lends itself to a dry martini or spirit-forward cocktail bursting with savoury sea spray & fragrant zest. ⁠We’d recommend trying the gin neat, or in a classic martini alongside fresh oysters (of course).
