Spring racing season is here and we’ll take any excuse to get dressed up and pop a bottle of champs! Lucky for us (and you) Champagne Pommery has launched a new Blanc de Blancs NV just in time for the races, and we’ve got the inside tasting scoop for you.
We attended a lunch event to try the new bubbles paired with delicious seafood menu from the NGV Garden Restaurant. In the process, we got to meet Madame Nathalie Vranken, Co-Owner of Pommery, visiting from France. She shared insights into the process of champagne making, selecting the highest quality fruits, and Pommery’s focus on ageing the bottles as long as possible (four years in this instance) to achieve the best flavour profile.
The new Blanc de Blancs NV is made from 100% Chardonnay grapes from France’s Montagne de Reims and Nogent l’Abbesse hills, regions known for their premium quality fruit.
The initial taste is fresh and crisp with hints of apple, finishing on a subtle grapefruit note.
Pommery’s new Blanc de Blancs NV is highly drinkable on its own, but became even more exquisite when paired with lemon verbena cured ocean trout and seared scallops atop a miso pumpkin sauce served from the Garden Restaurant. Seared scallops and champagne are the pinnacle of life, in my opinion!
The story of Champagne Pommery began in 1836 with an ambitious vision from the Pommery family and a goal to “conquer the world.” Since then, Pommery has become the second largest champagne producer in the world, and the Vranken Pommery estate is a UNESCO World Heritage Site. Pommery is responsible for introducing Brut champagne to the world in 1874.
Decades of knowledge and innovation have gone into the creation of Pommery’s new Blanc de Blancs NV and it shows in the delicate, smooth, and balanced flavour.
