‘Sushi, cheese, and blow torch’, are three words that normally wouldn’t belong in the same sentence. I’m sure you can guess where this is going. Sushi lovers of Melbourne, please welcome The Modern Eatery – Richmond’s newest sushi joint, king of aburi sushi, and the unexpected.
The Modern Eatery is the fish child of Jason Tan and Edward Teh an accounting/engineer duo who launched their first store in Perth in 2015. Their Melbourne location opened in Swan St, Richmond this August. We got to check out the whole thing first hand at the launch party.
I was greeted with a glass of white wine and a blow torch armed sous chef bronzing molten cheese atop sushi rolls. Raw fish and melty cheese…I knew it was going to be a great night!
For me, sushi has always been a meal for friends, socialising, and sharing. Many a birthday dinner and graduation have been celebrated over platters of sushi rolls with those closest to me. I was excited to once again, sit down with all my food blogger besties, and bliss out over crumbly tempura topped rolls.
The Modern Eatery brings a new twist to classic sushi. Serving up aburi sushi (that means partially flame grilled) which gives the fish a rich savoury flavour. You will find some classic sushi rolls on the menu, along with the not-so-classic craft rolls with unique toppings and garnishes like melted cheese, avocado sauce (the Japanese version of guacamole), and crunchy tempura.
If you’re after a taste bud tingler, try the Caribbean Treasure – sashimi hidden under a blanket of Japanese salsa, cucumber, tempura bits, avocado, and spicy sauce. For the not-so-fishy, The Modern Eatery has a range meat dishes including deep fried chicken tempura, wagyu beef, and bao buns (complete with a chargrilled stamp of The Modern Eatery logo).
