What do Australian oysters, Chablis wine and Merivale have in common? This spring, they’re coming together for a one-of-a-kind collab that brings freshness, finesse and a sense of discovery to the heart of Sydney’s dining scene.
For wine-loving Sydneysiders, from 29 September to 13 October 2025, 16 standout Merivale venues will host an exclusive Chablis Week, spotlighting the timeless pairing of Chablis and oysters.
Guests can choose between six or twelve complimentary oysters, perfectly matched with hand-selected bottles of vibrant Chablis. The event showcases the depth and complexity of the region’s wines from Petit Chablis and Chablis, through to Premier Cru and the coveted Chablis Grand Cru, all while showing just how versatile this French favourite can be, pairing effortlessly with everything from sashimi and fresh vegetables to creamy cheeses.
Chablis is produced in the renowned wine region of France, in the northernmost part of Bourgogne, where still wines are made exclusively from Chardonnay grapes. Defined by its distinct profile and signature vibrant acidity, Chablis reflects the purity of its terroir and the expertise of its winemakers. And here in Australia? We’re clearly fans, with Aus ranking as the 10th largest market for this unique drop.
Merivale and Chablis is more than a celebration of iconic food and seriously good French wine; it’s an invitation to experience and connect with Chablis on a whole new level, it’s a match made in heaven, if you ask us.
