Three Bottle Man and Silvester’s – making Bulletin Place the must-visit spot in Sydney

Add Three Bottle Man and Silvester’s onto your list of why you should check out Bulletin Place in Sydney’s CBD. The award-winning bar and award-winning restaurant are siblings under the aegis of Marriott, each providing their own distinct take on hospitality for visitors and locals.

To get a proper taste of what Bulletin Place can offer, we began our evening at the bar Three Bottle Man. The name comes from the proximity to Pitt Street…named after 18th-century British Prime Minister William Pitt…who was known for carrying three bottles of liquor with him on all time on his doctor’s orders. The bar gains inspiration from its name and often featured triads of items — three dishes, three cocktails.

And oh, the cocktails! Our waiter spent time finding out what each and every one of us at the media event enjoyed. He then created twists on our favourites — Aussie style. Every single item of alcohol on the menu at Three Bottle Man is from Australia. Gins, wines, whiskies — you name it, it’s from Oz. That’s an incredible commitment, and wonderful to see. Let alone drink. Each cocktail was more beautiful than the last.

Fortified with our first of (a few more than) three drinks of the evening, we entered Silvester’s. You’ll gasp when you see it. Inside, the Marriott Hotel is a huge open space, all soaring ceilings. Silvester’s — named after local butchers from days gone by — is the restaurant in the middle of it all.

Helmed by French chef Raphael Szurek, the food is seasonal, local — and wonderful. His Michelin-star experience is at the fore, with the inventive dishes bursting with flavour and plated to perfection. From fresh seafood (including crab) to vegetables, desserts to meat, there’s something to suit every palate.

Most impressive? The menu at Silvester’s changes completely every single month. While I’m going to shed a small tear that I can never again have the most amazing dessert of my life (let’s just say it involved yuzu — and dry ice), I’m heartened by the knowledge that, no matter what month I choose to visit Silvester’s again, Raphael will once more be pulling out all the stops with the menu.

Three Bottle Man has turned Bulletin Place into a Melbourne-style laneway. Meanwhile, right next door, Silvester’s is serving up fresh world-class cuisine every month.

There’s just one thing to do: We’re all going to have to return on (at least) a monthly basis to see what’s new.
